It's been a while since the last post, it's because christmas is almost here, ad there's so much to do. I love my job in The Body Shop, but it's been super busy last week. I'll try to manage things more this week :)
Today, I will describe the chicken potato salad. This food can be served as a side dish, but also as a main dish. It has carb, protein, beans and herb and it's a complete food. I usually serve this food with pita bread.
Serving size: 5 person
Prep time: 30 min
Cook time: 1 hour
Medium potato: 4
Drained niblets corn: 1 cup
Drained sweet peas: 1 cup
Grated pickles: 1/3 cup
Mayo: 1 cup
Salt: 1 1/2 tsp
Black pepper: 1/4 tsp
Lemon juice: 1/2 Tbsp
Chopped fresh parsley: 1/4 cup

What you need
Chicken breast: half a chicken breastMedium potato: 4
Drained niblets corn: 1 cup
Drained sweet peas: 1 cup
Grated pickles: 1/3 cup
Mayo: 1 cup
Salt: 1 1/2 tsp
Black pepper: 1/4 tsp
Lemon juice: 1/2 Tbsp
Chopped fresh parsley: 1/4 cup
How to prepare
- Cook chicken breast following the recipe for chicken broth (here)
- Cook potatoes in water.
- Grate cooked potatoes, cooked chicken and pickles in a big bowl.
- Mix mayo, salt, black pepper and lemon juice in a small bowl and then add to the big bowl.
- Add parsley to the mix and stir everything well, so the product has a nice and smooth texture.
